The first Blaze, still the flagship
Matt Haskell lit this fire first
Blaze opened in 2011 as Matt Haskell’s first Blaze restaurant, “a more upscale, urban-feeling concept, with custom-made grills burning red oak,” as he told Down East Magazine. It grew into the flagship of the Blaze Restaurant Group.
Haskell is a Bangor native who started out washing dishes, worked an outdoor wood-fired lobster pit at the Harborside in Brewer, learned the trade at Rupununi in Bar Harbor in the late ’90s, and built Finback Alehouse before creating Blaze.
Named Maine farms run through the menu: Dover Creek Farms beef under the Blaze Burger, Secret Meadow Farm bacon on top of it, Pineland Farm curds on the poutine, and Pemaquid and Bagaduce oysters at the raw bar.
And the doors stay open all year, heated patio and all, in a town where plenty of kitchens go dark for the winter.
