Rosa’s Trattoria

dal 1998

The pasta was made this morning.

Rosa cooks her mother’s recipes on Cottage Street, the way she has since 1998. Dinner from 4:30.

The lobster ravioli: Maine lobster, saffron cream.

Tagliatelle, cut this morning. The notebook was Rosa’s mother’s.

Twenty-six years, one pasta machine.

Rosa opened this little dining room on Cottage Street in 1998 with her mother’s recipe book and a single pasta machine. Twenty-six years later, the machine still runs every morning. So does Rosa.

Everything that can be made in-house, is: the tagliatelle, the marinara that simmers all afternoon, the tiramisu that regulars call in to reserve before dinner.
